Handi chicken is a popular North Indian dish that is made with bone-in chicken pieces cooked in a creamy, spicy tomato-based gravy. Here is a recipe to make Handi chicken:
Ingredients:
– 500 g bone-in chicken pieces, cleaned and washed
– 2 tbsp oil
– 1 tbsp ghee
– 1 cup sliced onions
– 1 tbsp ginger-garlic paste
– 2-3 green chillies, slit
– 2-3 medium-sized tomatoes, pureed
– 1 tsp red chilli powder
– 1 tsp coriander powder
– 1/2 tsp turmeric powder
– 1 tsp garam masala powder
– 1/2 cup fresh cream
– Salt to taste
– Fresh coriander leaves for garnishing
Instructions:
1. Heat the oil and ghee in a handi or a deep-bottomed pan.
2. Add sliced onions and sauté until golden brown.
3. Add ginger-garlic paste and green chillies, and sauté for a minute.
4. Add the tomato puree and cook until the oil separates.
5. Add the chicken pieces and sauté until they are lightly browned.
6. Add red chilli powder, coriander powder, turmeric powder, garam masala powder, and salt. Mix well.
7. Cover the pan and let it simmer on medium heat until the chicken is cooked through, stirring occasionally.
8. Add fresh cream and mix well. Cook for another 2-3 minutes.
9. Garnish with fresh coriander leaves and serve hot with naan, roti or rice.
